Here is a great recipe for an asparagus quiche by a health expert.

8-10 slices bacon

1 medium onion, diced

½ cup sliced fresh mushrooms

½ cup or more of fresh asparagus, cut in small pieces

(Or, broccoli or other vegetable of your choice)

4 eggs, beaten

1 cup half and half

l cup whole milk

1 ½ cups shredded Swiss cheese or cheese of your choice

 

Prepare a 9-inch deep dish pie crust.

In a skillet fry a healthy choice of  bacon over medium heat until crisp.

Drain and crumble; reserve 2 tablespoons bacon grease in a pan.

Add onion; cook until softened.

Add mushrooms to onion mixture; set aside.

Saute asparagus until tender, but still crisp.

In mixing bowl, combine milk, half and half and eggs and mix in cheese and bacon add vegetables and mix well.

Pour mixture in pastry crust in pie pan and place on baking sheet.

Bake at 325 degrees for 50 to 60 minutes or until a knife inserted in a center of quiche

comes out clean. Makes 8 servings.

Serve warm or at room temperature with a green salad.
