Butternut squash bisque
Cut butternut squash in half. Boil for 45 minutes or until soft. Blend in food processor. Bring to boil four cups of vegetable broth. Add butternut squash mixture. For heartier taste add 1-1/4 cups of half and half.
Boil until smooth. Add nutmeg, pepper and salt to taste. Add croutons.
Butternut squash is packed with carotenoids, which are great antioxidants. The starches in this squash have anti-inflammatory properties.
